Neekta's Gluten-Free, Dairy-Free Oatmeal Chocolate Chip Cookies

Hey there, fellow baking enthusiasts! It's Neekta from Baking with Neekta, and I'm thrilled to share one of my all-time favorite recipes with you today. Neekta's Gluten-free and Dairy-free Maple Almond Cupcakes are not only incredibly delicious but also gluten-free and dairy-free, making them perfect for anyone with food sensitivities, just like me.
Ingredients:
2 eggs (Whites and yolks separated)
1/3 cup maple syrup
1 cup + 2 tbsp almond flour
Instructions:
Prepare the Batter: In a mixing bowl, combine the egg yolks and maple syrup, stirring until well mixed. Gradually add in the almond flour, stirring until you have a smooth batter.
Whip the Egg Whites: In a separate bowl, beat the egg whites until stiff peaks form. This step is crucial for achieving that light and fluffy texture in your cupcakes.
Fold it Together: Gently fold the whipped egg whites into the egg yolk mixture. Be careful not to overmix; you want to maintain the airy consistency of the batter.
Bake to Perfection: Line your muffin tin cavities with paper liners and scoop the batter into each cavity. Pop them into the oven preheated to 350°F (175°C) and bake for about 20 minutes, or until the cupcakes are golden brown and a toothpick inserted into the center comes out clean.
