Hi friends!

It’s Neekta from Baking with Neekta! I’m so excited to share one of my favorite seasonal treats—Pumpkin Cookies! These aren’t just any cookies; they’re gluten-free, dairy-free, and packed with warm, cozy spices - perfect for fall. If you have food sensitivities like I do, you’ll love this recipe. Let’s make sure everyone can enjoy tasty, comforting treats without worry!


Ingredients:

  • 2 cups white rice flour

  • ½ cup arrowroot starch

  • 1 tsp baking powder

  • 1 tsp baking soda

  • Pinch of salt

  • 2 tsp cinnamon

  • 1 tsp pumpkin pie spice

  • ½ cup coconut oil

  • 1 cup packed brown sugar

  • ½ cup golden cane sugar

  • 1 tsp vanilla extract

  • 1 cup pumpkin puree

  • 1 egg


Directions:

  1. Mix the Dry Ingredients: In a medium bowl, whisk together the rice flour, arrowroot starch, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. These spices make the cookies taste like pure fall bliss! 🍁


  2. Cream the Wet Ingredients: In a larger bowl, use an electric hand mixer to blend the coconut oil, brown sugar, cane sugar, and vanilla until light and fluffy. Be sure to scrape down the sides of the bowl to mix it all evenly. Then, add in the pumpkin puree and egg. Whip until smooth.


  3. Combine the Ingredients: Gradually pour the dry ingredients into the wet mixture, mixing as you go. When the dough gets thick, use a spatula to fold the rest in.


  4. Prepare to Bake: Preheat your oven to 350°F (175°C), and line two cookie sheets with parchment paper, silicone liners, or a little greasing of coconut oil.


  5. Scoop and Chill: Scoop out the dough with an ice cream scoop to form round balls on the baking sheets. Then, pop them in the fridge for 30 minutes to chill—this helps the cookies keep their shape while baking.


  6. Bake: Bake the cookies for 30 minutes until they’re dark, golden brown and your kitchen smells amazing!
