Hi there, lovely bakers! 🎃👻 I’m Neekta, and I’m so excited to share my special Halloween spice cookies recipe with you. These gluten-free and dairy-free cookies are perfect for adding a spooky touch to your holiday celebrations.

Whether you're craving a sweet treat or looking for a fun baking project, these Halloween-themed cookies will bring a little magic to your kitchen!

For those of us with food sensitivities (myself included), finding tasty, festive treats can be a challenge. But don't worry! This recipe is not only allergy-friendly but also deliciously packed with seasonal spices to give you all the fall vibes.

Halloween Spice Cookies Recipe:


Ingredients:


For the cookies:

  • ½ cup coconut oil

  • 4 Tbsp brown sugar

  • ½ cup maple syrup

  • 1 egg

  • 2 cups white rice flour (+ extra if necessary)

  • ½ tsp salt

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp nutmeg

  • ½ tsp allspice

  • 1-2 tsp cinnamon


For the chocolate ganache:

  • 1 cup mini chocolate chips

  • ½ cup coconut OR oat milk


For the royal icing:

  • 1 egg white

  • 1 tsp vanilla extract

  • A bunch of powdered sugar (no need to sift)


Step-by-Step Instructions:


1. Make the chocolate ganache: Start by preparing the ganache a few hours ahead so it has time to thicken. Place the mini chocolate chips in a bowl. In a small saucepan, bring the coconut or oat milk to a boil. Once boiling, pour the hot milk over the chocolate chips and let it sit for a few minutes. Then, whisk until you achieve a silky smooth consistency. Set aside to cool.


2. Mix the dry ingredients: In a large bowl, whisk together the white rice flour, salt, baking powder, baking soda, nutmeg, allspice, and cinnamon.


3. Cream the wet ingredients: In a separate bowl, whip the coconut oil and brown sugar together until fluffy. Don’t forget to scrape down the sides of the bowl! Add in the maple syrup and continue whipping, followed by the egg. Keep mixing until the batter is nice and smooth.


4. Combine wet and dry ingredients: Gradually fold the dry ingredients into the wet mixture using a spatula and your hands. If the dough is too sticky, add a little extra rice flour.


5. Shape the cookies: On a floured surface, roll out the dough and use Halloween-themed cookie cutters (I love using pumpkins, ghosts, and cats!) to cut out shapes. Place the cookies on silicone-lined baking sheets.


6. Bake: Preheat your oven to 350°F (175°C) and bake the cookies for about 20 minutes, or until they are lightly golden.


7. Prepare the royal icing: While the cookies are cooling, make the icing. Whip the egg white and vanilla extract with an electric hand mixer. Slowly add in the powdered sugar until it reaches a thick, frosting-like consistency. Once the icing is thick, add a few drops of water to thin it out.


8. Assemble and decorate: Once the cookies have cooled completely, pipe a generous layer of chocolate ganache between pairs of cookies to make delightful cookie sandwhiches. Then, let your creativity run wild! Use the rest of the chocolate ganache to decorate the cookies with cute or creepy Halloween faces, and drizzle it on to create a spooky mummy effect.


9. Enjoy: Your Halloween spice cookies are now ready to be devoured. Serve them up at your Halloween party, or enjoy them with a cup of warm cider. Either way, these cookies are sure to be a hit.
