Gluten-Free, Dairy-Free Apple Macarons!

Hi friends! It's Neekta here from Baking with Neekta. If you're like me, you understand the joy of savoring a treat that's perfectly sweet, crisp, and, most importantly, free from gluten and dairy. Today, I'm sharing a delightful recipe that brings warm, spiced flavors to your plate – my gluten-free and dairy-free Apple Macarons! 🍎

These macarons combine the elegance of French pastries with the heartwarming taste of caramelized apples and cinnamon. Whether you have food sensitivities or just want to try a healthier dessert, this recipe is for you.


Ingredients You’ll Need:


For the macaron shells:

  • 100 grams dehydrated egg whites

  • 90 grams golden cane sugar

  • 1 tsp vanilla extract

  • ¼ tsp cream of tartar

  • 140 grams almond flour

  • 130 grams powdered sugar


For the cinnamon frosting:

  • 2 cups coconut oil

  • 1 cup powdered sugar

  • 1 tsp cinnamon


For the apple filling:

  • 4 apples (washed, peeled, diced into tiny cubes)

  • ¼ cup lemon juice

  • ½ cup brown sugar

  • Pinch of nutmeg

  • A dash of cinnamon

  • ¼ cup water

  • 3 Tbsp arrowroot starch


Preparation Tips:

The Night Before: Dehydrate your egg whites! Measure them into a bowl, cover with foil, and poke holes on the top. Refrigerate overnight for that perfect macaron texture.


Making the Apple Filling: Find a detailed guide on my previous blog post or check out my video on YouTube. Start by heating your diced apples with brown sugar, lemon juice, nutmeg, and cinnamon in a pan over medium-high heat. Once the coconut oil melts and the mixture starts to boil, let it cook until caramelized. Stir in the arrowroot slurry (water mixed with arrowroot starch) to thicken the filling.


Preparing the Frosting: Whip the coconut oil, sifted powdered sugar, and cinnamon until light and fluffy with an electric mixer. Set it aside – it’s the perfect creamy complement to the apple filling.


Making the Macarons:

  1. Preheat your oven to 300°F (150°C).

  2. Line two baking sheets with silicone liners.

  3. Sift and combine almond flour and powdered sugar. Blend, sift, and repeat until ultra-fine.

  4. In a clean stand mixer, whip the egg whites, vanilla, and cream of tartar on high. Gradually add cane sugar until you achieve stiff, glossy peaks.

  5. Gently fold in the dry ingredients until your batter flows like thick lava and can make a smooth figure-eight.

  6. Pipe small, round shells onto the baking sheets and tap them against the counter to remove air bubbles.

  7. Allow them to rest under an air vent until they form a skin.

  8. Bake each tray for 12 minutes (rotate after 5 minutes - then bake for 7 minutes).


Assembling the Macarons: Once cooled, spread a thin layer of frosting on the bottom of half the shells. Pipe a frosting border and fill with your apple mixture. Top with the remaining shells, press lightly, and voilà – your fall-inspired Apple Macarons are ready!
