Neekta's Delightful Spice Cookies Recipe for Food Sensi

Hello friends! It's Neekta again, and today, I'm thrilled to share my special delightful Spice Cookies Recipe for Food Sensitive people with you. These cookies are perfect for everyone, especially if you have food sensitivities like me. They're gluten-free, dairy-free, and nut-free – because everyone deserves a tasty treat!


Perfect for fall all the way to and beyond the holidays, as they have a very similar texture to gingerbread cookies, only no ginger!


They are very quick and easy to bake and they make a very cool gift for almost any occasion.

So let's get started!


Ingredients:

  • 3 cups white rice flour

  • ½ tsp salt

  • ¾ tsp baking powder

  • ¾ tsp baking soda

  • ⅜ tsp nutmeg

  • ¾ tsp allspice

  • 2 tsp cinnamon

  • ¾ cup coconut oil (NOT melted)

  • 6 Tbsp brown sugar

  • 2 room temperature eggs

  • ¾ cup maple syrup

Instructions:

  1. Start by preheating your oven to 350 degrees F. While it's warming up, line your cookie sheets with a silicone sheet (OR use parchment paper OR coconut oil).

  2. In a small bowl, mix together the dry ingredients: white rice flour, salt, baking powder, baking soda, nutmeg, allspice, and cinnamon.

  3. In a separate bowl, whip the coconut oil and brown sugar together until they're all mixed up. Then, add in your room temperature eggs and the sweet maple syrup. Be sure to mix everything thoroughly.

  4. Now, it's time to bring the dry and wet ingredients together. Add the dry mix into the wet one and stir it all up to form a cookie dough. If it's a bit too soft, you can add a bit more rice flour.

  5. On a floured surface, roll out your cookie dough and let your creativity run wild with your favorite cookie cutters. Stars, hearts, or even gingerbread shapes, it's all up to you!

  6. Pop your cookies in the preheated oven and let them bake for about 20 minutes. Your kitchen will smell amazing as they bake!

  7. Once they're golden brown and oh-so-delicious, take them out and let them cool for a bit. Then, it's time to enjoy your fantastic Spice Cookies. They're so good, you won't even miss the ginger!
