Neekta's Sunshine Drop: Homemade Lemon Curd Recipe

Today, I'm sharing my special recipe for Neekta's Sunshine Drop: Homemade Lemon Curd Recipe. It's gluten-free, dairy-free, nut-free, and bursting with tangy lemon goodness. Plus, it's super easy to whip up in your own kitchen!
Let's dive into the ingredients:
Ingredients:
6 egg yolks
1 cup golden cane sugar
2 Tbsp lemon zest
½ cup strained lemon juice (about 2 organic lemons)
Now, onto the fun part – making the magic happen:
In a medium-small saucepan, combine your egg yolks, sugar, lemon zest, and freshly strained lemon juice. We want to keep out those seeds and pulp, so make sure to strain your lemon juice beforehand.
Place the saucepan over medium-low heat and start whisking away. Keep whisking continuously until the mixture starts to thicken up. This will take a few minutes, so be patient – good things come to those who whisk!
Once the mixture has thickened slightly, you can turn up the heat to medium. Keep whisking away until the curd reaches the desired consistency. Remember, it should be thick but still a bit runny. It'll continue to thicken as it cools.
And that's it – you've just created your own batch of sunshine in curd form! I like to think of it as liquid gold, perfect for filling cupcakes, tarts, pies, or simply enjoyed by the spoonful. The possibilities are endless!
