Neekta's Gluten-Free Vanilla Almond Cake!

Hey there, amazing bakers! It's Neekta, and I am beyond excited to share one of my popular recipes with you! – Neekta's Gluten-Free Vanilla Almond Cake! 🍰✨ The cake itself is also dairy-free. And you could always decorate it with coconut whipped cream instead of butter-cream!

Living with food sensitivities can be a bit of a challenge, but that doesn't mean we can't indulge in some scrumptious treats. That's why I'm thrilled to present this gluten-free masterpiece that's not only easy to whip up (with only 3 ingredients!!) but also incredibly delicious.


Ingredients:

  • 12 eggs (whites and yolks separated)

  • 1 1/2 cups golden cane sugar

  • 3 ½ cups almond flour


Let's Dive Right In:

  1. Prepare the Yolk Mixture: In a bowl, combine your egg yolks with 1 cup of golden cane sugar and a splash of vanilla. With your electric hand mixer, whip them up until they're delightfully fluffy and pale.

  2. Add Almond Flour: In the yolk mixture, add your almond flour, and mix. Watch as it transforms into a doughy consistency that's just begging to become a cake. Trust me; the aroma is already making your kitchen smell like a dream.

  3. Whip Up Those Egg Whites: In your stand mixer, with the whisk attachment, let's work on those egg whites. Beat them until frothy, then slowly drizzle in the remaining ½ cup of cane sugar. Keep whipping until they're soft, fluffy, and oh-so-white. We're looking for that perfect "partially stiff," or "soft" stage!

  4. Combine: Now, gently fold those glorious egg whites into the yolk-flour mixture. Pro tip: Whip it real good during the first few folds; it might be a bit stiff, and it will break the dough down.

  5. Prep for Baking Brilliance: Grease and line (or flour) your chosen cake pans or cupcake tins. I personally love making mini batches sometimes! I use a combo of coconut oil and white rice flour for this process.

  6. Into the Oven It Goes: Bake your creation at 350 degrees F for 52 minutes (or a mere 20 minutes for cupcakes). Just imagine the anticipation as your kitchen fills with the sweet aroma of Vanilla Almond goodness!

  7. Let the Magic Settle: Once they're out of the oven, let your cakes cool (or enjoy them warm, no judgment here). Now comes the best part – get creative! Stack them high for a birthday cake extravaganza or top them with dairy-free whipped cream and a cherry on top. The possibilities are as broad as your imagination!
