Neekta's Gluten-Free, Dairy-Free Oatmeal Chocolate Chip Cookies

Hey there, it's Neekta from Baking with Neekta! Today, I'm sharing one of my all-time favorite recipes: Neekta's Gluten-Free, Dairy-Free, Oatmeal Chocolate Chip Cookies. These cookies are not only incredibly delicious but also perfect for those with food sensitivities like me. They're gluten-free, dairy-free, and nut-free, so everyone can enjoy a tasty treat without worry!


Ingredients for Neekta's Gluten-Free, Dairy-Free, Oatmeal Chocolate Chip Cookie:


  • ¾ cup white rice flour

  • 3 tablespoons arrowroot starch

  • 2 tablespoons oat flour

  • 1 ½ cups oats

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ teaspoon cinnamon

  • ½ cup coconut oil

  • ⅓ cup brown sugar

  • ½ cup cane sugar

  • 1 ½ teaspoons vanilla extract

  • 1 egg

  • Chocolate chips (as much as you personally think is necessary!)


Instructions:

  1. Preheat Your Oven: Start by preheating your oven to 375 degrees Fahrenheit. Line two cookie sheets with a silicone mat for easy cleanup.

  2. Mix Dry Ingredients: In a medium-small bowl, whisk together the white rice flour, arrowroot starch, oat flour, oats, baking soda, salt, and cinnamon. Set this mixture aside.

  3. Whip Wet Ingredients: In a medium bowl, whip together the coconut oil (make sure it's not melted), brown sugar, cane sugar, and vanilla extract until nice and fluffy. Once fluffy, crack in the egg and continue whipping until smooth.

  4. Combine Wet and Dry Ingredients: Pour the dry ingredients into the wet ingredients and mix until the dough forms and becomes sticky. Don't forget to pour in your chocolate chips and gently fold them into the dough.

  5. Form Cookies: Roll the dough into little balls and place them onto your prepared trays.

  6. Bake: Bake the cookies for 10-15 minutes. I recommend rotating the pans every 5 minutes for even baking. If you prefer a hard-chewy oatmeal cookie, you can add an extra five minutes (total: 15).

  7. Enjoy: Once baked to perfection, let the cookies cool for a few minutes on the trays before transferring them to a wire rack to cool completely. Then, grab a glass of your favorite dairy-free milk and enjoy these delicious oatmeal chocolate chip cookies!
