Hey there, it's Neekta from Sensitive Tasty Treats! With Nowruz just around the corner, I'm thrilled to share one of my favorite Persian treats with you: Neekta's Gluten-Free Dairy-Free Nowruz Noon Berenji. Not only is this recipe a traditional delight for your haftsin, but it's also perfect for anyone with food sensitivities like me – it's gluten-free, dairy-free, and nut-free!

Let's dive into the ingredients:


Ingredients:

  • ½ cup non-virgin coconut oil (not melted)

  • ¾ cup powdered sugar

  • 1 egg

  • 1 ½ cups white rice flour

  • 2 Tbsp rose water

  • 2 tsp cardamom

  • Poppy seeds for decoration


Here's how to whip up these delicious cookies:

  1. Preheat your oven to 325 degrees Fahrenheit and line two cookie sheets with a silicone mat.

  2. In a medium bowl, grab your electric hand mixer and whip together the coconut oil and powdered sugar until creamy and fluffy.

  3. Add in the fragrant flavors of rose water and cardamom, mixing until everything is nicely combined.

  4. Crack in the egg and whip until the mixture is smooth.

  5. Now, here's the trick to the perfect dough: Gradually add the white rice flour. Trust me, adding it all at once will make your dough dry and hard to work with. But with a little patience, you'll get a beautifully smooth and malleable dough!

  6. Roll the dough into 1-inch balls and place them on the prepared cookie sheets. Use a spoon or a cookie cutter to create a charming flower-like design on the tops while gently flattening the cookies.

  7. Sprinkle each cookie with poppy seeds for that extra touch of traditional flair.

  8. Bake your cookies for 20-25 minutes until they're irresistible.
