Neekta's Gluten-Free and Dairy-Free Sugar Cookies Recipe for Happy Hearts!

Hey, lovely bakers! It's Neekta here from Sensitive Tasty Treats again, and I'm bursting with excitement to share one of my all-time favorite recipes with you – Neekta's Gluten-Free and Dairy-Free Sugar Cookies Recipe for Happy Hearts! These little bites of joy are not just tasty; they're a game-changer for those of us with food sensitivities.

Let's dive right into the magic, shall we?


Ingredients:


Cookies:

  • 3 cups rice flour

  • 1 cup oat flour

  • ½ tsp salt

  • ½ cup arrowroot starch

  • 1 cup coconut oil (not melted)

  • 1 cup golden cane sugar

  • 2 room temperature eggs

  • 2 tsp vanilla extract


Royal icing: (optional decorator)

  • 2 egg whites

  • 1 bag of powdered sugar

  • 1 tsp vanilla extract



Instructions:

Cookies:

1. Dry ingredients: In a big bowl, let's start by combining the rice flour, oat flour, arrowroot starch, and a pinch of salt. Mix with a whisk!

2. Whipping: With either an electric hand mixer or a stand mixer, whip together the coconut oil, golden cane sugar, and vanilla extract until you've got a fluffy cloud of deliciousness.

3. Eggs in the Mix: Add those room temperature eggs and whip it up some more. We're aiming for a smooth, silky mixture.

4. Merge and Mold: Now, bring the dry and wet mixes together and watch the magic happen. Knead it like you mean it until you've got a dough that's just waiting to become something amazing.

5. Roll, Cut, and Create: Roll out your dough, and get creative with those cookie cutters! Whether it's hearts, stars, or unicorns, make them as cute as your heart desires.

6. Bake to Perfection: Preheat that oven to 375 degrees F, and let your soon-to-be masterpieces bake for 12 minutes.


Royal icing:


  • In a medium-sized bowl, whip up 2 egg whites (and flavouring such as vanilla extract) with an electric hand mixer. Once frothy, dump in the powdered sugar little by little, until you get desired consistency. If too thick, add water to thin the mixture out! VOILA! Royal icing! You can decorate your baked (AND COOLED) cookies however you like! Have fun!!
