Hey there, amazing bakers! It's Neekta from Baking with Neekta, and I'm beyond excited to share one of my winter recipes with you – Gluten-Free and Dairy-Free Gingerbread Cookies! šŸŖāœØ

Living with food sensitivities myself, I know the struggle of finding tasty treats that fit our dietary needs. That's why I created this scrumptious recipe to spread some holiday cheer without compromising on flavor. Plus, it's nut-free too, making it a win-win for everyone with allergies!


Let's dive into the magic of making these delightful cookies:


Ingredients:

  • 3 cups white rice flour

  • ¼ tsp salt

  • ¼ tsp baking soda

  • 2 tsp ground ginger

  • 2 tsp ground cinnamon

  • ½ tsp ground allspice

  • 6 Tbsp coconut oil (not melted)

  • ¾ cup packed brown sugar

  • ½ cup molasses

  • 1 Tbsp coconut milk


Instructions:

  1. Prep the Dry Ingredients: In a medium bowl, mix together the white rice flour, salt, baking soda, ground ginger, ground cinnamon, and ground allspice.

  2. Create the Cookie Dough: In a large bowl, whip up the coconut oil and sugar until it's all fluffy. Add in the molasses and egg, continuing to whip until you've got a smooth, dreamy mixture. Now, gently fold in the dry ingredients, and knead the dough with your hands until it's perfectly combined.

  3. Adjust for Texture: If your dough seems a bit on the dry side, no worries! Add in coconut milk, one tablespoon at a time, until it reaches that perfect, cookie-ready consistency.

  4. Chill Out: Roll out your cookie dough onto parchment paper, cover it with another layer of parchment paper, and let it chill in the fridge for two hours.

  5. Shape and Bake: Once your dough is nicely chilled, roll it out some more, cut out the cutest shapes your heart desires, and bake those beauties at 350 degrees F for a sweet 12 minutes.

  6. Time to Indulge: Voila! Your gluten-free, dairy-free, nut-free gingerbread cookies are ready to be devoured. Enjoy the deliciousness, and don't forget to share the love!
