Hey there, foodies! It's Neekta from "Baking with Neekta," and today I'm super excited to share one of my all-time favorite recipes: Neekta's Delicious Gluten-Free, Dairy-Free, and Nut-Free French Apple Cake. The best part? It's gluten-free, dairy-free, and nut-free, so everyone with dietary sensitivities can enjoy a scrumptious treat.

Let's dive right into the magic of this delectable French apple cake!


Ingredients:

  • 2/3 cup white rice flour

  • 1/3 cup arrowroot starch

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 2 eggs

  • 1/2 cup cane sugar

  • Coconut oil, melted

  • 1/8 cup water

  • 1 tsp vanilla extract

  • 2-3 apples (peeled and chopped)

  • Powdered sugar for dusting

Instructions:

  1. Start by mixing the dry ingredients in a bowl. That's the white rice flour, arrowroot starch, baking powder, and a pinch of salt. Combine them all, and you're ready to roll!

  2. In a separate bowl, beat the eggs, sugar, and vanilla until they're nice and fluffy. For this, you can use an electric hand mixer, which makes the process super easy.

  3. Now, it's time to add a touch of moisture. Pour in the water and some melted coconut oil into your egg-sugar-vanilla mix. Stir it all together until it's well combined.

  4. Carefully fold in those beautiful chopped apples. The apples add that amazing texture and flavor you'll love.

  5. Grease and flour a square cake pan. Then, pour your batter into the pan. It's really starting to smell incredible!
