Hey there, lemon-aholics! It's Neekta here from Baking with Neekta, and today I'm sharing one of my all-time favorite recipes – Gluten-Free, Dairy-Free, and Nut-Free Lemon Squares! 🍋✨

Living with food sensitivities myself, I know how challenging it can be to find delicious treats that everyone can enjoy. That's why I'm thrilled to share this lemony goodness with you. Plus, I've got a step-by-step video waiting for you on my YouTube channel, so let's get baking!


Ingredients for Neekta's Gluten-Free Dairy-Free Nut-Free lemon squares:


Crust:

  • 2 ½ cups white rice flour

  • ½ tsp salt

  • ⅔ cup powdered sugar

  • 12 tbsp melted coconut oil

Filling:

  • 3 cups golden cane sugar

  • Zest of 4 organic lemons

  • 1 cup fresh lemon juice (about 4 lemons)

  • 1 cup white rice flour

  • 8 eggs

Instructions:

  1. Preheat and Prep:

  • Preheat your oven to 350 degrees F.

  • Grease and line your square "brownie" baking pans with coconut oil and parchment paper.

  1. Create the Crust:

  • In a medium-small bowl, mix white rice flour, salt, and powdered sugar.

  • Pour in the melted coconut oil and mix until combined.

  • Press the mixture onto the bottom of your pans to form the crust.

  • Bake for 20 minutes.

  • For an extra burst of flavor, blend sugar and lemon zest together to infuse those delicious lemony notes.

  1. Prepare the Lemon Filling:

  • In a large bowl, combine the lemon zest-sugar mixture, lemon juice, eggs, and white rice flour.

  • Mix until everything is beautifully combined.

  1. Assemble and Bake:

  • Pour the lemony filling onto the baked crust.

  • Bake for an additional 25 minutes until the edges are golden and the center is set.

  1. Cool, Dust, and Dive In:

  • Let your lemon squares cool to perfection.

  • Dust with powdered sugar for that final touch of sweetness.

  • Cut into squares and get ready to savor the magic!
