Hey there, fellow foodies! It's Neekta here, back with another delicious recipe from my kitchen to yours. Today, I'm super excited to share with you my choux pastry: a Gluten-Free, Dairy-Free, Nut-Free delight.

Yes, you heard it right – choux pastry that's allergy-friendly and oh-so-tasty!

I know firsthand how challenging it can be to find treats that cater to food sensitivities, which is why I'm passionate about creating recipes that everyone can enjoy. So, whether you're gluten intolerant, lactose sensitive, or simply looking for a scrumptious dessert option, this choux pastry recipe is sure to hit the spot.

Now, let's get baking! Here's what you'll need:


Ingredients for Neekta's Choux Pastry Gluten-Free Dairy-Free Nut-Free:

  • 1 cup white rice flour

  • ½ tsp psyllium husk

  • ¼ tsp salt

  • 1 tsp baking powder

  • 4 room temperature eggs

  • ½ cup coconut oil

  • 1 cup water


Instructions to bake Neekta's Choux Pastry:

  1. Preheat and Prep: Start by preheating your oven to 400°F and lining your cookie sheets with silicone mats. This step ensures your choux pastry puffs bake perfectly without sticking.

  2. Mix Dry Ingredients: In a medium-small bowl, combine the rice flour, psyllium husk, salt, and baking powder. Mix them well until fully incorporated.

  3. Prepare Dough: In a medium saucepan, bring water and coconut oil to a boil over high heat. Once boiling, reduce the heat slightly and quickly add the dry ingredients to the saucepan. Stir vigorously until a soft, fluffy dough forms.

  4. Transfer to Mixer: Transfer the dough to the bowl of a stand mixer fitted with a whisk attachment. Let it mix on low speed for about 2 minutes to cool down.

  5. Add Eggs: Crack in the eggs, one at a time, allowing each egg to mix in thoroughly before adding the next. Keep mixing until the dough becomes smooth, sticky, and beautifully yellow.

  6. Pipe the Dough: Scoop the choux dough into a large round-tipped piping bag. Pipe dollops of dough onto your prepared cookie sheets, leaving space between each puff. Pipe the choux dough in accordance to it's purpose; used for eclairs, cream puffs, meat puffs, etc!

  7. Bake: Pop your cookie sheets into the preheated oven and bake for 30 minutes or until the puffs are golden brown and irresistibly cute (PUFFY)!

  8. Release Steam: Once baked, use a knife to poke little holes in each puff to allow the steam to escape. This step ensures your puffs stay crispy.

  9. Fill and Enjoy: Now comes the fun part – filling your choux pastry with whatever deliciousness your heart desires!
