Make Your Own Gluten-Free, Dairy-Free Fondant at Home!

I’m super excited to share a special recipe with you today—my very own gluten-free and dairy-free fondant! If you’ve ever struggled to find a fondant that’s safe for food sensitivities, or if you’re just looking for a healthier alternative to store-bought versions, this is for you!
Fondant can be a little tricky to make, but with this guide, you’ll be whipping up beautiful cake decorations in no time!
But first, a quick reminder! You can follow along with me on my YouTube channel @bakingwithneekta for a step-by-step video tutorial. I promise, it’s easier than it sounds!
Ingredients You’ll Need:
Glucose Syrup:
1 cup granulated golden cane sugar
⅜ cup water
⅛ tsp cream of tartar
Pinch of salt
Fondant:
2 tsp gelatin
¼ cup cold water
½ cup glucose syrup (from above)
1 tsp vanilla extract
2 Tbsp coconut oil
2 Tbsp glycerin
How to Make Your Own Glucose Syrup:
In a medium saucepan, mix together the cane sugar, water, cream of tartar, and salt over medium-high heat.
Stir until the sugar is fully dissolved. Once it starts boiling, reduce the heat to medium-low and let it bubble until it reaches 240°F.
As soon as it hits 240°F, remove the saucepan from the heat and set it aside.
Time to Make the Fondant:
In a small bowl, combine the gelatin with cold water. Let it bloom, meaning let it thicken slightly.
Once bloomed, melt the gelatin using a bain-marie (a fancy way of saying use steam to melt it! To do this, add water to the bottom of a small saucepan. Let it boil on high heat. Once it boils, reduce the heat to low, and place a heat-safe bowl overtop). Make sure the water doesn’t touch the bowl while you’re melting the gelatin!
After the gelatin has melted, stir in the coconut oil, glycerin, vanilla, and the glucose syrup you made earlier. Keep stirring until everything is melted and combined.
Remove the bowl from the heat and mix in powdered sugar until you get a slightly thicker liquid that’s turned white-ish.
Generously sift powdered sugar onto a clean surface, then pour your liquid fondant mixture on top. Keep kneading the mixture into the powdered sugar, adding more as needed, until you achieve that smooth, doughy fondant texture!
And… TADA! 🎉
Your fondant is ready to be shaped, colored, and turned into whatever your imagination can dream up!
