Indulge in Love: Neekta's Gluten-Free, Dairy-Free, Nut-Free Chocolate Cupcakes!

Hey there, fellow baking enthusiasts! It's your pal Neekta, back at it again with another scrumptious treat from my kitchen to yours. With Valentine's Day just around the corner, I wanted to share a special recipe that's not only delicious but also perfect for anyone with food sensitivities. Say hello to my Gluten-Free, Dairy-Free, Nut-Free Chocolate Cupcakes!
Ingredients for :
Cupcake batter:
7 eggs (whites and yolks separated)
¾ cups (divided) golden cane sugar
¼ tsp salt
⅔ cup white rice flour
⅓ cup cocoa powder
Chocolate cream:
1 can coconut whipping cream
⅔ cup melted chocolate chips
½ cup powdered sugar (sifted)
Instructions for Neekta's Gluten-Free, Dairy-Free, Nut-Free Chocolate Cupcakes:
Preheat and Prepare: Start by preheating your oven to 350 degrees Fahrenheit and lining your cupcake tin with paper liners.
Whip the egg yolks: In a medium-sized bowl, whip together the egg yolks, ½ cup golden cane sugar, and salt until they're nice and fluffy and pale. Sift in the cocoa powder and add the white rice flour. Mix until everything's combined.
Whip the Egg Whites: Using your trusty stand mixer, whip the egg whites until they're frothy, then slowly drizzle in the remaining sugar (1/4 cup) while it whips. Keep going until soft/stiff peaks form.
Fold and Scoop: Carefully fold the whipped egg whites into the egg yolk mixture. You might want to give it a quick mix with your electric hand mixer for the first round to make folding easier. Once combined, scoop the batter into each cupcake cavity, making about 18 cupcakes.
Bake: Pop those beauties into the oven and let them bake for around 20 minutes, or until they're nice and puffy!
Make the Cream: While your cupcakes cool, whip up the chocolate cream. Combine the coconut whipping cream, powdered sugar, and melted chocolate until thoroughly mixed. Chill it for a bit to stiffen for piping.
Decorate and Enjoy: Once the cupcakes have cooled and the cream is chilled, pipe a beautiful dollop of cream onto each cupcake. And there you have it - a delightful, allergen-friendly treat that's perfect for sharing with your loved ones this Valentine's Day!
