Hey there, lovely bakers! Neekta here, and I'm super excited to share one of my all-time favorite recipes with you - Neekta's Gluten-Free, Dairy-Free, Sugar-Free, and Nut-Free Banana Bread! Not only is it scrumptious beyond words, but it's also a treat for everyone dealing with food sensitivities, just like me. So, let's dive into the magic of gluten-free, dairy-free, and nut-free goodness!


Ingredients for Neekta's gluten-free, dairy-free, sugar-free banana bread:


  • 9 ripe bananas šŸŒ

  • 12 eggs 🄚

  • 1 cup melted coconut oil 🄄

  • 2 cups white rice flour šŸš

  • Splashes of cinnamon šŸ‚

  • 1 ½ tsp baking soda 🧁

  • ¾ tsp salt šŸ§‚

  • 1 Tbsp vanilla extract 🌼


Instructions:

  1. Preheat and Prep:

  • Set your oven to a toasty 350 degrees Fahrenheit.

  • Grease up those three bread pans with coconut oil.

  1. Banana Blend:

  • Grab your humongous bowl and toss in those 9 peeled bananas.

  • With your trusty electric hand mixer, whip it up until those bananas are all broken down and mushy.

  1. Eggstatic Elegance:

  • Add in the dozen eggs and whip it all together until it's nice and smooth – we're aiming for eggstatic elegance!

  1. Spice It Up:

  • Sprinkle in the baking soda, salt, vanilla, and a few splashes of cinnamon.

  • Keep on whipping until everything is wonderfully combined.

  1. Flour Power:

  • Introduce the star of our gluten-free show – the white rice flour. Whip it up until it's fully incorporated.

  1. Coconut Caress:

  • Pour in that melted coconut oil and give it one last loving whip until everything is beautifully mixed.

  1. Into the Oven:

  • Pour the enchanting batter into your prepared loaf pans.

  • Bake for about 50 minutes, or until the top is a gorgeous dark golden brown – the aroma will drive you wild!

  1. Slice and Savor:

  • Once your banana bread has cooled and is brimming with anticipation, gently take those cakes out of their pans.

  • Cut into slices and voilĆ  – your gluten-free, dairy-free, nut-free Banana Bread masterpiece is ready to be devoured!
