Gluten-Free & Dairy-Free Thumbprint Cookies: A Delight for All!

Hello, my lovely bakers! 🧁 It's Neekta here from Baking with Neekta! Today, I’m thrilled to share one of my favorite gluten-free and dairy-free treats—Thumbprint Cookies! These little bites of joy are not only super easy to make, but they’re also incredibly versatile. Whether you’re a jam lover or a caramel fanatic, these cookies will hit the spot. And the best part? They’re perfect for anyone with food sensitivities, just like me! Let’s get baking!


Ingredients You’ll Need:

  • 1 cup white rice flour

  • ⅛ cup arrowroot starch

  • ¼ tsp salt

  • ½ cup coconut oil

  • ½ cup golden cane sugar

  • 3 tsp vanilla extract

  • 1 egg

  • Your favorite jam or caramel for filling


Instructions:

  1. Preheat and Prep: Preheat your oven to 375°F (190°C). Line two baking sheets with silicone liners, parchment paper, or grease them with coconut oil.

  2. Mix the Dry Ingredients: In a small bowl, whisk together the rice flour, arrowroot starch, and salt. Set this aside for later.

  3. Whip the Wet Ingredients: In a medium bowl, use an electric hand mixer to whip together the coconut oil, golden cane sugar, and vanilla extract until light and fluffy. Don’t forget to scrape down the sides of the bowl!

  4. Add the Egg: Mix in the egg until the batter is smooth and well combined.

  5. Combine and Form the Dough: Gradually fold the dry mixture into the wet mixture until a soft cookie dough forms.

  6. Shape the Cookies: Roll the dough into small balls, and gently press your thumb (or a round object) into the center of each to create a little well for the filling.

  7. Fill and Bake: Spoon your favorite jam or caramel into the wells. Place the cookies in the oven and bake for 20-25 minutes, or until they’re golden brown around the edges.

  8. Cool and Enjoy: Let the cookies cool completely on the baking sheet. Once cooled, they’re ready to be devoured!
