Hello, everyone! It’s Neekta from Baking with Neekta. Today, I’m super excited to share one of my all-time favorite recipes: Fluffy Pancakes! These pancakes are not only delicious but also gluten-free, dairy-free, and nut-free, making them perfect for anyone with food sensitivities, just like me.


Why You’ll Love These Pancakes

If you’ve been searching for a recipe that’s fluffy, tasty, and free from common allergens, you’re in the right place. These pancakes are easy to make and perfect for a delightful breakfast or brunch. Plus, they only require a few simple ingredients!


Ingredients (Makes 2 Pancakes - 1 Serving)

  • 1 egg - whites and yolk separated

  • 1 Tbsp coconut milk

  • 2 Tbsp white rice flour

  • ¼ tsp vanilla extract

  • Pinch cream of tartar

  • 2 Tbsp golden cane sugar

  • Coconut oil to grease


Instructions

  1. Prepare the Batter: In a very small bowl, whisk the egg yolks with the vanilla, coconut milk, and rice flour until combined and smooth.

  2. Whip the Egg Whites: In a slightly larger bowl, whip the egg whites (with an electric hand mixer) with the cream of tartar until frothy. Once frothy, drizzle in the cane sugar while whipping until you reach very soft, luscious peaks.

  3. Combine Gently: Fold the egg whites into the egg yolk mixture gently, so that it remains fluffy.

  4. Cook the Pancakes: Slightly grease a skillet with coconut oil and place it on medium heat. Once warm, scoop the batter with an ice cream scooper to form 2 big, fluffy pancakes.

  5. Steam and Flip: Pour some water onto each side of your pan and cover to let it cook for 7 minutes. Flip the pancakes, pour a bit more water (it will sizzle), cover, and let it cook for another 3-5 minutes.

  6. Serve and Enjoy: SERVE!!! You can top these pancakes with maple syrup, fresh fruits, or even my silk whipping cream recipe available on my blog.
