Delightful Gluten-Free and Dairy-Free Meringue Cookies
Hello, lovely bakers! It's Neekta here, and I'm so excited to share one of my favorite recipes with you: meringue cookies! These delightful treats are not only gluten-free and dairy-free but also light, airy, and cripsy. They LITERALLY melt in your mouth! Whether you have food sensitivities like me or you're just looking for a delicious treat, these meringue cookies are sure to bring a smile to your face.
Ingredients:
4 egg whites
1 pinch salt
¼ tsp cream of tartar
1 tsp vanilla extract
½ cup granulated golden cane sugar
Instructions:
Preheat and Prep: Preheat your oven to 200 degrees Fahrenheit. Line 2 baking sheets with silicone liners or parchment paper. Prepare your piping bags with a beautiful star piping tip and place them in a cup for easy filling later on.
Clean Equipment: To ensure your meringue turns out perfectly, wipe the inside of your stand mixer bowl and whisk attachment with apple cider vinegar. This step helps remove any fat residue that might interfere with the meringue.
Whip It Up: Add your egg whites, salt, cream of tartar, and vanilla extract to the bowl of your stand mixer. Whip until the mixture becomes frothy.
Add Sugar Slowly: Slowly drizzle in the sugar while the mixer is running. Patience is key here! Once all the sugar is added, continue whipping until the meringue is fluffy and white.
Check for Stiff Peaks: Keep whipping the meringue until all the sugar is dissolved and stiff peaks form. This means the meringue will stand up straight when you lift the whisk out.
Pipe and Bake: Carefully pipe your meringue onto the prepared baking sheets. Bake in the preheated oven for 2 hours.
