Hey everyone! 🌟 Neekta here from Baking with Neekta, and I’m super excited to share one of my favorite recipes with you today—gluten-free and dairy-free chocolate cupcakes! These cupcakes are perfect for anyone with food sensitivities who still wants to enjoy delicious treats. Plus, they're super easy to make! Let's dive in.

Ingredients


Cupcakes:

  • ½ cup coconut oil

  • ⅓ cup chocolate chips

  • 4 Tbsp cocoa powder

  • ¾ cup white rice flour

  • ¾ tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 3 eggs

  • 1 tsp vanilla extract

  • ½ cup + 2 Tbsp cane sugar

  • ⅓ cup coconut milk


Frosting:

  • 1 cup coconut oil (NOT melted)

  • ½ cup powdered sugar

  • ¼ cup cocoa powder


Optional Ganache Filling:

  • 1 cup + 1 Tbsp chocolate chips

  • ½ cup coconut milk


Instructions


  1. Preheat your oven to 350°F (175°C). Line 12 cupcake cavities with paper liners or grease with coconut oil.

  2. Melt the coconut oil, chocolate chips, and cocoa powder together in a microwave-safe bowl. Microwave in 30-second intervals until smooth and glossy.

  3. Combine Dry Ingredients: In a small bowl, whisk together the white rice flour, baking powder, baking soda, and salt.

  4. Mix Wet Ingredients: In a medium bowl, whisk the eggs, vanilla extract, and cane sugar until smooth. Add in the coconut milk and the melted chocolate mixture. Whisk until combined and chocolatey!

  5. Combine All Ingredients: Pour the dry ingredients into the wet ingredients and whisk until smooth.

  6. Fill Cupcake Liners: Using an ice cream scooper, fill the cupcake liners ¾ of the way.

  7. Bake: Bake the cupcakes for 16-18 minutes or until a fork inserted in the center comes out clean. They'll be puffy and wonderful!

  8. Cool: Let the cupcakes cool on a cooling rack.

  9. Make Frosting: While the cupcakes are baking, whip together the coconut oil, powdered sugar, and cocoa powder with an electric hand mixer until fluffy and smooth.

  10. Optional Ganache Filling: If you want to add a surprise ganache filling, heat the coconut milk in a small saucepan until bubbling. Add the chocolate chips and let them sit for a few minutes, then whisk until smooth. Once the cupcakes have cooled, scoop a small hole in the center of each and fill with the ganache.

  11. Decorate: Pipe a beautiful design of chocolate frosting onto each cupcake.

  12. Enjoy: And VOILA! Enjoy your delicious gluten-free and dairy-free chocolate cupcakes!
