Delightful Chocolate Cupcakes - Gluten-Free & Dairy-Free Recipe

Hey everyone! š Neekta here from Baking with Neekta, and Iām super excited to share one of my favorite recipes with you todayāgluten-free and dairy-free chocolate cupcakes! These cupcakes are perfect for anyone with food sensitivities who still wants to enjoy delicious treats. Plus, they're super easy to make! Let's dive in.
Ingredients
Cupcakes:
½ cup coconut oil
ā cup chocolate chips
4 Tbsp cocoa powder
¾ cup white rice flour
¾ tsp baking powder
½ tsp baking soda
½ tsp salt
3 eggs
1 tsp vanilla extract
½ cup + 2 Tbsp cane sugar
ā cup coconut milk
Frosting:
1 cup coconut oil (NOT melted)
½ cup powdered sugar
¼ cup cocoa powder
Optional Ganache Filling:
1 cup + 1 Tbsp chocolate chips
½ cup coconut milk
Instructions
Preheat your oven to 350°F (175°C). Line 12 cupcake cavities with paper liners or grease with coconut oil.
MeltĀ the coconut oil, chocolate chips, and cocoa powder together in a microwave-safe bowl. Microwave in 30-second intervals until smooth and glossy.
Combine Dry Ingredients:Ā In a small bowl, whisk together the white rice flour, baking powder, baking soda, and salt.
Mix Wet Ingredients:Ā In a medium bowl, whisk the eggs, vanilla extract, and cane sugar until smooth. Add in the coconut milk and the melted chocolate mixture. Whisk until combined and chocolatey!
Combine All Ingredients:Ā Pour the dry ingredients into the wet ingredients and whisk until smooth.
Fill Cupcake Liners: Using an ice cream scooper, fill the cupcake liners ¾ of the way.
Bake:Ā Bake the cupcakes for 16-18 minutes or until a fork inserted in the center comes out clean. They'll be puffy and wonderful!
Cool:Ā Let the cupcakes cool on a cooling rack.
Make Frosting:Ā While the cupcakes are baking, whip together the coconut oil, powdered sugar, and cocoa powder with an electric hand mixer until fluffy and smooth.
Optional Ganache Filling:Ā If you want to add a surprise ganache filling, heat the coconut milk in a small saucepan until bubbling. Add the chocolate chips and let them sit for a few minutes, then whisk until smooth. Once the cupcakes have cooled, scoop a small hole in the center of each and fill with the ganache.
Decorate:Ā Pipe a beautiful design of chocolate frosting onto each cupcake.
