Hey there, lovely people!

Neekta here from Baking with Neekta, and today, I'm thrilled to share one of my all-time favorite recipes with you – my homemade and gluten-free Strawberry Jam Filling Recipe! 🍓✨

Being someone with food sensitivities myself, I know the struggle of finding treats that are not only delicious but also safe to eat. That's why I've crafted this recipe to be gluten-free, dairy-free, and nut-free, so everyone can indulge in tasty treats without worries!

So, without further ado, let's dive into the goodness of fresh strawberries and sweet memories!

Ingredients:

  • 1 cup (+ ⅓) fresh, organic, washed strawberries

  • 2 ½ tbsp cane sugar

  • 1 tbsp lemon juice

  • Pinch salt

  • 2 tbsp water

  • ½ tbsp arrowroot starch


Instructions:

  1. Prep the Strawberries: Start by chopping 1 cup of strawberries into small and medium chunks (think cute little cubes!). Then, finely dice the remaining ⅓ cup of strawberries into TEENY, tiny cubes.

  2. Cooking Time: In a small saucepan, combine the 1 cup of chopped strawberries with cane sugar, lemon juice, and a pinch of salt. Stir it all together on medium heat until the sugar is dissolved, and the mixture turns wonderfully watery. Cover the saucepan and let it simmer, giving it an occasional stir to let those flavors mingle and maybe even caramelize a bit.

  3. Arrowroot Magic: While the strawberries work their magic on the stove, let's prepare our arrowroot slurry. In a small bowl, whisk together water and arrowroot starch until smooth and ready to save the day.

  4. Mash and Mix: Once the strawberries are soft and dreamy, gently mash them with a potato masher (don’t worry about perfection here!). Next, swiftly add in those diced teeny strawberries and stir until they're all cozied up together.

  5. Thicken Up: Time to pour in the arrowroot slurry and give it a quick stir. Watch in amazement as the mixture transforms into a thicker, jelly-like delight!

  6. Chill Out: Transfer your strawberry jam filling into a container and pop it into the fridge to cool. Trust me, the waiting is totally worth it!

  7. Serve and Enjoy: And there you have it – your very own homemade strawberry jam filling! It's perfect for adding a burst of fruity goodness to macarons, cupcakes, cakes, or simply enjoying by the spoonful (if you want to spread it on toast, you might want to add more sugar, because the sweetness is meant for filling already-sweet desserts).
