Ingredients You’ll Need
¼ cup + 1 tbsp white rice flour
¼ tsp baking powder
⅛ cup golden cane sugar
A pinch of salt
1 ½ tbsp cocoa powder
2 tbsp coconut oil
¼ cup + 1 tbsp coconut milk
Instructions
Mix Dry Ingredients: In a very small bowl, whisk together the rice flour, baking powder, cane sugar, salt, and cocoa powder until well incorporated.
Heat Wet Ingredients: In a pretty, cozy mug, heat the coconut oil and the coconut milk in the microwave just until warm (the oil will be melted).
Combine Wet and Dry: Pour the wet mixture into the dry mixture and whisk until smooth.
Bake: Pour the batter back into the mug you used for heating and microwave for 2 minutes. The cake should be puffy, soft, and delicious!
Optional Topping: Sprinkle some chocolate chips on top before baking to make it extra melty.
Serve and Enjoy: Serve this delightful single-serve treat with a scoop of your favorite ice cream, whipped cream, or a drizzle of caramel sauce.
