Delicious Gluten-Free, Dairy-Free, and Nut-Free Cherry Cake Recipe

This cake is not only incredibly tasty, but it’s also gluten-free, dairy-free, and nut-free, making it perfect for those of us with food sensitivities. Let’s get baking!

I created this recipe because I wanted to enjoy a delicious treat without worrying about my food sensitivities. This cherry cake is moist, flavorful, and packed with juicy cherries. Plus, it’s super easy to make!
Ingredients You'll Need:
For this recipe, you'll need the following ingredients:
⅔ cup white rice flour
⅓ cup arrowroot starch
1 tsp baking powder
¼ tsp salt
2 eggs
½ cup cane sugar
½ cup coconut oil, melted
⅛ cup water
1 tsp vanilla extract
1 cup pitted cherries
Instructions:
1. Preheat Your Oven First, preheat your oven to 350 degrees Fahrenheit. Line your 9 by 9 square cake pan with parchment paper, and grease it with coconut oil.
2. Prepare the Cherries Next, cut the cherries in half and set them aside.
3. Mix the Dry Ingredients In a medium-small bowl, whisk together the rice flour, arrowroot starch, baking powder, and salt until combined.
4. Mix the Wet Ingredients In a medium bowl, whip together (with an electric hand mixer) your eggs, sugar, and vanilla until pale and fluffy. Pour in your water and mix. Add in the melted coconut oil, then quickly dump in the dry ingredients. Mix until smooth.
5. Fold in the Cherries Fold in your prepared cherries gently.
6. Bake Pour the batter into your cake pan and bake for 30 minutes.
7. Enjoy! Let your cake cool slightly, then slice it up and ENJOY!!!
