Delicious Coconut Macaroons: A Gluten-Free, Dairy-Free Delight!

Hey everyone! Itās Neekta from Baking with Neekta, and today Iām super excited to share one of my favorite recipes: Coconut Macaroons. These tasty treats are perfect for anyone with food sensitivities, just like me! They're gluten-free and dairy-free, so everyone can enjoy them without worry. Letās dive into the recipe!
Ingredients:
1 ā cup shredded coconut
ā cup cane sugar
2 Tbsp coconut flour
ā tsp salt
½ tsp vanilla extract
2 eggs
Instructions:
Preheat your oven to 325°F. Line a cookie sheet with a silicone mat or parchment paper, or simply grease it with coconut oil.
In a medium-small bowl, combineĀ the shredded coconut, sugar, coconut flour, and salt. Mix them together.
In a small bowl, whipĀ the egg whites and vanilla extract until theyāre fluffy and white.
FoldĀ the egg whites into the dry mixture until everything is well combined. The mixture will be sticky and soft.
Using a small ice cream scooper, scoopĀ little balls of dough and compress them onto the cookie sheet. Make sure theyāre cute and round!
BakeĀ the macaroons for 20 minutes until theyāre beautifully golden brown.
Once baked, let the cookies coolĀ completely.
Optional:Ā Dip your macaroons in melted dark chocolate or drizzle it on top for an extra treat!
