Hey everyone! It’s Neekta from Baking with Neekta, and today I’m super excited to share one of my favorite recipes: Coconut Macaroons. These tasty treats are perfect for anyone with food sensitivities, just like me! They're gluten-free and dairy-free, so everyone can enjoy them without worry. Let’s dive into the recipe!
Ingredients:
1 ⅓ cup shredded coconut
⅓ cup cane sugar
2 Tbsp coconut flour
⅛ tsp salt
½ tsp vanilla extract
2 eggs
Instructions:
Preheat your oven to 325°F. Line a cookie sheet with a silicone mat or parchment paper, or simply grease it with coconut oil.
In a medium-small bowl, combine the shredded coconut, sugar, coconut flour, and salt. Mix them together.
In a small bowl, whip the egg whites and vanilla extract until they’re fluffy and white.
Fold the egg whites into the dry mixture until everything is well combined. The mixture will be sticky and soft.
Using a small ice cream scooper, scoop little balls of dough and compress them onto the cookie sheet. Make sure they’re cute and round!
Bake the macaroons for 20 minutes until they’re beautifully golden brown.
Once baked, let the cookies cool completely.
Optional: Dip your macaroons in melted dark chocolate or drizzle it on top for an extra treat!
